2. Orys Baratheon And A Bastard's Name

Daenerys Targaryen legitimises Gendry in The Last of the Starks, naming him the Lord of Storm's End. That's an important title, not just because it makes him a true Baratheon, but because it also shows Dany's sense of strategy, and a similarity to her ancestor, Aegon the Conqueror.
When Aegon conquered Westeros, he named Orys Baratheon (rumoured to be his bastard half-brother) as the new Lord of Storm's End, having defeated its previous rulers, House Durrandon, with Orys forming House Baratheon and establishing their rule of the Stormlands that existed until quite recently.
It's unlikely Gendry will have that important a role to play - although if he ends up making some dragon armour for Drogon, then it'd be crucial to Daenerys winning - but it's still a nice symbolic nod to the cyclical nature of things, which is one of the most consistent themes in the series. The same can be said for Gendry being spurned by Arya, which loosely mirrors his father, Robert, being overlooked by Lyanna Stark.
A final note on Gendry is that his bastard name is revealed to be Rivers. Rivers is the bastard name for those born in the Riverlands, whereas Gendry, having been born and raised in King's Landing, would've been Gendry Waters (although since he was never acknowledged, he was really just Gendry).
