2. He Nearly Appeared On Enterprise
Although it was not witnessed onscreen, Sarek's death in the course of TNG's Unification was established as canon in-Universe, thus scuppering any appearances in DS9 or Voyager, and effectively ending Mark Lenard's tenure as the character.
With the new millennium, however, came Star Trek's increased focus on prequel stories, and opportunities to bring Spock's father back to the screen. Although his most significant prequel appearance is in Discovery, where he takes on Michael Burnham as his ward, prior to this there were discussions about placing him in Enterprise.

Whilst the idea to plant Sarek on Earth in such a role, learning of their culture and eventually falling for Amanda Grayson, would seem to be of great interest, it ultimately would not come to be. We could speculate any number of reasons, but Sarek being born 14 years after the show is set might have something to do with it
