Aside from the alien posing as her father in Coda, very little is revealed about Kathryn’s family in Voyager. In that same episode it is briefly mentioned that she has a sister and season seven’s Author, Author reveals that her mother is the first person she wishes to contact once communication is established with the Alpha Quadrant, but neither are mentioned in any further detail.

For more information, we must, once again, delve into beta canon. Returning to Mosaic, it is revealed that Kathryn’s mother is named Gretchen. The Voyager Bible, while giving no name, notes Janeway’s mother to be a Starfleet theoretical mathematician and describes a close relationship between mother and daughter. The Autobiography of Kathryn Janeway maintains the established name of Gretchen but, instead of a mathematician, suggests that Kathryn’s mother was a children’s author - responsible for several stories featured in The Adventures of Flotter holoprogram.

Kathryn’s sister was named Phoebe in Mosaic and is described, in both this novel and The Autobiography of Kathryn Janeway, as the complete opposite of her sister. Phoebe is an artist and far more carefree than her older sibling. While the name of Kathryn’s mother has never been confirmed in canon, Phoebe was named in the Prodigy episode Mindwalk as a way to confirm Admiral Janeway’s true identity to her holographic double, and thus became canon.

The Autobiography of Kathryn Janeway also states that Kathryn’s family lived on a farm in Bloomington, Indiana, and it seems reasonable to assume that it is this same farm that Admiral Janeway eventually retires to at the end of Prodigy season two.
