Kane seems like the right choice just based on their history. They did the big breakup several weeks ago with Brock Lesnar actually injuring Kane and then Rollins did the cheap heel thing by attacking him some more. They could bring back Kane in the black and red outfit even with a mask to go after Rollins for revenge. Since Undertaker/Lesnar is at SummerSlam, WWE doesn't have to put the Rollins match on last. It also won't need that much build because the story of Rollins being a jerk to Kane has been going on for about four months now. Another option, which would be a surprise, would be for Sting to face Rollins. They don't have a rivalry or a history, but Sting did go after Triple H at WrestleMania and Rollins is associated with Sting, so it makes sense in that regard. I think Cena will be ready, but it's not a guarantee by any means. They got lucky a bit because there's about four weeks between when he got hurt and when SummerSlam takes place. That gives him some time to heal.
