When we meet Hannibal Lecter in The Silence Of The Lambs, he might be in a prison cell, but there's never a sense that he's not in complete control of the situation. It's almost like Clarice Starling is the captive and he's playing with her, such is the intoxicating impact of his off-kilter charm and intellect.

And it turns out that he absolutely was in control, as was discovered in 2015, when the real meaning of one of his most famous quotes came to light, suggesting he had hinted to Clarice that he was planning something.

It turns out that when he said "I ate his liver with some fava beans and a nice Chianti", Lecter was making a medical joke. In his prison, he would have been treated with Monoamine oxidase inhibitors (MAOIs) to control his mental condition, as a fan on Reddit revealed.

And as any medical professional like Lecter would know, among the things you can't at or drink with them are liver, beans, wine. Lecter was basically confessing that he wasn't taking his meds, perhaps to foreshadow his escape.
