7. Mace Windu
There's a pretty fair consensus among Star Wars fans that Mace Windu is another character who never quite realised his full potential, in large part because when Samuel L. Jackson is cast as a Jedi, you sure as Hell expect him to be a Sith-annihilating bada**.
Windu may have spent too much of his screen time sat around discussing the Senate, but when he finally got down to business, he certainly made good on exactly what fans expected.
With his sole mastery of the lightsaber fighting style known as Vaapad (which required him to flirt with the Dark Side but not cross over), Mace is widely agreed to be the second-most powerful Jedi on paper, and his two major demonstrations of this in the movies are his decapitation of Jango Fett and his ultimate battle with Palpatine.
Windu essentially won the fight against Palpatine and was only "defeated" by a cheap shot from Anakin, so it doesn't seem fair to hold that against him. He's an absolute, ahem, force to be reckoned with (sorry).
