2. Bail Organa
Bail Organa, like Mon Mothma, is someone who I feel did not get enough screen time during the prequels. Oh, sure, he did end up with a few more than Mon Mothma, but he deserved a few additional scenes to flesh out his character and cause. Bail Organa is tied to almost every important event in the saga of Star Wars. As a highly political person, Bail served as a Senator on the Galactic Senate during the Old Republic. He witnessed Palpatine's rise to power and the subsequent fall of the Jedi. He was not just alive during the execution (pun!) of Order 66, he was one of the few to see the Jedi Temple burn before his eyes and behold a young Jedi slaughtered by the Clone Troopers. Similar to Mon Mothma, he had befriended Senator Padmé Naberrie and became one of the original founders of the Rebel Alliance. Because of Organa's friendship with the Jedi, he offered to adopt and raise Leia as his own child with his wife. He was skilled and deceptive enough to effectively hide her from Anakin, who was now the evil Darth Vader. Leia would not even have the title of "Princess" if it weren't that Bail Organa was head of the royal house on Alderaan. Though Leia has qualities of both Anakin and Padmé within her, there's no denying that Organa would have pushed her to become the woman we know and love. Leia also became deeply involved in politics and we can only assume that it was Organa's influence that led her to become a prominent figure within the Rebel Alliance, carrying along his legacy long after he died. As someone who inadvertently links the prequels to the Original Trilogy, it's a shame that he ends up obliterated when his home planet of Alderaan is destroyed by the Death Star in A New Hope. I would have liked to see more of him, as I'm sure he would have been just as key of a player in the Rebellion as Mon Mothma turned out to be.
