6. Yoda
This is one that fans have been wondering about for decades. Ever since his introduction in Empire, Yoda has remained one of the more mysterious characters in the saga. His alien race is one of the only ones without an official name, and there has only ever been one other instance of another creature from his race appearing in the films, and even then, Yaddle was essentially just a background extra in The Phantom Menace.
Even in the prequels, while practically everyone else was getting origin stories, Yoda remained steady. He was already the head of the Jedi order at the start of the series. So there's certainly room to tell the story of Yoda's training and rise to leadership.
But there's also a ton of other ways a Yoda spin-off could go. He played an integral role throughout the Clone Wars, a lot of which is still uncharted. Perhaps the most interesting route would be to explore his time between trilogies, in self-imposed exile on Dagobah. Little is known about what Yoda did here other than grow more in-touch with the force.
This could lead to a quiet, experimental Star Wars film that explores the nature of the force in more intimate detail. And as an added bonus, Frank Oz's return as puppet Yoda in Last Jedi was the stuff dreams are made of and any excuse to see more of his work is worth it.
