One of the things that Star Wars is most well-known for is its massive dog fights in space. It would be a huge shame not to capitalize on this in Star Wars Land, letting ride-goers feel like they're directly part of the action.

At Disney's Magic Kingdom there's a ride called Buzz Lightyear's Space Ranger Spin. It involves travelling around in the dark blasting aliens using a laser gun. Each alien that's successfully hit contributes to a ride-goers score, all of which are totalled at the end to pronounce a victor. It seems Star Wars is ripe for this sort of adaptation, and could be a huge amount of fun if done correctly.

Running with the premise of the Buzz Lightyear ride, imagine taking part in the assault on the Death Star, but instead of blasting aliens you're travelling in an X-Wing and taking down TIE Fighters and turrets in order to aid Luke Skywalker's trench run. There could be differing points available depending on whether or not you hit the cockpit or side and perhaps even a collaborative effort to shoot down Vader's spinning TIE Advanced.
