2. General Chang - Star Trek VI: The Undiscovered Country
This is arguably one of the greatest moments of the film, which isn't to say that every second of Christopher Plummer doesn't own the scene. He brings a depth and class to The Undiscovered Country that completely obliterates all memory of The Final Frontier, giving the Original Series cast the send-off that they truly deserved.
Plummer's General Chang was the duplicitous architect of an assassination plot, targeting his own Chancellor and the Federation President. For a time, he operates in the shadows, keeping his public face as a supporter of the new chancellor. However, by the time that the Enterprise-A arrives at Khitomer, he revels in his villainy.
His Shakespeare quotes may have gone down in Star Trek history, yet it is the very last time that he evokes Hamlet on the bridge of his Bird-of-Prey that lands him here. The Enterprise has fired a special torpedo that streaks through space, searching for its targeting. Chang's eye opens wide initially, stunned as he is that the Starfleet vessel may have detected the cloaked Klingon ship. It lazily weaves before zeroing in on his vessel.

With a resigned turn of the head, Chang accepts his fate. The torpedo hits.
