"Marvel Cinematic Universe" is such an obvious yet fitting title for this interconnected web of movies, but why was that particular phrase selected?

Well, the answer is simple - Marvel Studios president Kevin Feige wanted audiences to understand that the MCU was its own thing, separate from the continuity of the comics:

"I wanted people to understand that this was a unique thing that we were doing. These are individual movies with their own franchises, and they are under this umbrella of a shared continuity, which hadn't been done before."

It also helps that the MCU acronym rolls off the tongue, unlike, say, "DCEU", or Sony's ridiculously-titled "SPUMC".
