Though we can't speak about specific bosses, we do know that a number of boss fights were removed from God of War 2018 due to them being too much of a headache for players and the developers alike to get to grips with.
In a 2018 interview with Noclip, game director Cory Balrog revealed that God of War 2018 originally had Kratos facing off against many considerably larger bosses, though these ended up being cut.
As for why? It was both because of the immense developer resources required to complete them - with Barlog estimating that 30 developers spent 18 months working on a single boss - and the fact that during testing, the bigger boss fights introduced issues with the game's user interface, which testers found distracting.
And so, for the many who complained that the game lacked the mega-scale boss fights from the original God of War trilogy, it was actually a conscious design choice to prevent players from constantly futzing around with the camera in the heat of battle.
