Savants were an enemy featured in earlier builds of BioShock, but were ultimately deleted because they were a pain in the ass for to deal with - more for developer 2K than for fans.

Each of the game's levels was originally said to contain a Savant - a mini-boss who could control various aspects of each level until they were defeated. 

The Savants resembled heads in jars, and two of them were reportedly named Themis and Prometheus, but 2K struggled to design compelling battles focused around enemies who were unable to freely move around and pursue the player.

Because 2K felt that the Savant fights were neither fun nor made much sense, they were eventually cut from the game. 

Given that the Big Daddy encounters throughout BioShock are decidedly more dynamic, it's tough to argue with the Savants' exclusion, even if it would've been neat to at least see what they looked like.
