1. Cynder - The Legend Of Spyro: The Eternal Night
The Legend of Spyro series is defined by Spyro's relationship with the female dragon Cynder, who over the course of the trilogy goes from antagonist, to uneasy ally, to lover.
In The Legend of Spyro: A New Beginning, Cynder is the game's main villain, having been corrupted by the Dark Master Malefor. Though by game's end Cynder appears to have been turned to the light side already, it's a far from concrete partnership.
The second game, The Eternal Night, sees Cynder repenting for her actions in the previous game, but she ends up captured in the hope of being turned back to the side of villainy. Ultimately, though, Cynder helps Spyro, and together they save the day.
Cynder's arc is completed in the threequel Dawn of the Dragon, which not only features a co-op mode with playable Cynder, but culminates with her professing her love for Spyro, resulting in them pairing off at the very end of the game.
Though you can argue Cynder was more of a zombie villain than an actual antagonist in her heart in the first game, who could've ever seen her turning this much of a 180 over the series?
