2. Fighting The Abyss Watchers - Dark Souls III

If Ornstein & Smough was too hot and all of Dark Souls II's bosses were too cold, DS III's Abyss Watchers are just right.

Set up as a fight against multiple 'cloning' enemies, tackling one Abyss Watcher - whilst not a walk in the park - is manageable and downright fun, battles being a blur of gnashing steel and last-minute dodge-rolls. However, give it a few seconds and another will spawn - and another.

The latter two will sporadically fight each other - such is their mindset in the lore - opening them up for all sorts of flanking manoeuvres. It turns into the perfect balance of technicality and skill, with that of odds that feel just the right side of overwhelming.

When you've finally depleted their combined lifebar they'll morph into one altogether more powerful entity for the big finish - one that'll really keep you on your toes with huge, arcing sword-swipes and leaping attacks.

As a final reward for going through all that, you can use the Abyss Watchers' Soul to forge their set of blades for yourself.
