1. Practice "Lock-On Etiquette"
The hardest thing to describe, "lock-on etiquette" is something borne from over a decade of Souls games.
It's about getting as comfortable as possible with locking and de-locking the camera. Knowing that you shouldn't wait for the game to de-lock automatically, and can unlock using R3 as soon as you know an enemy is defeated, to re-pan the camera around the room, scan for future threats, or otherwise keep an eye on what might be creeping up behind you.
A good Souls player is constantly de-locking to free up the angle of their swing animation to catch groups of foes, re-locking for focused damage against a specific threat, then de-locking to regain control of the camera once again, to see what else is coming.
Get used to flicking camera lock on and off near-constantly, and you'll master the art of taking on multiple foes with ease.
