Such a simple gesture, in-game it has many uses.
Bowing at NPCs is a great way to greet them while you enter camp, or to say thanks for a merchant's transaction. Jin will actually speak a line or two if you bow to a fallen resident of Tsushima or a pile of bodies, whilst he'll stay silent if you do this to Mongols.
Best of all, keep an eye out for statues. When bowed at, many Shinto or animal statues trigger unique animations. Animal ones like frogs or crabs will see a bevy of them appear around your feet, whereas Inari shrines adorned with various smaller statues can swarm Jin in light.
Though Sucker Punch hid a lot of these "uses" for you to stumble upon, there are occasionally small wooden signs with the bow symbol that indicate where you should stand.
