To do so, go into the Pokémon menu and look to the teeny, TINY pencil icon next to their names. Tap this and you'll bring up a keyboard - feel free to name them whatever you like, as despite being a public forum, the game doesn't seem to recognise or care about any profanity, believe it or not.
