The Pursuer was underused in the original game, however, in the Scholar of the First Sin edition, he is one of the most interesting things about the game. The Pursuer hunts you down instead of waiting for you to find him. Whilst he does have a set boss fight, he appears throughout the game in various surprising locations. You might wonder why this works in his favour when the Guardian Dragon was criticised for being reused and that's a fair point. The Pursuer is made to be a singular entity and his appearances only enhance the boss fight, creating a rivalry almost. And that is quite unique and very fun. Not to mention he is a great fight.
