Later on in the game, you reach the New Orleans-inspired district of Saint Denis. Much like its real life counterpart, the outlying area is complete with bayou and surrounding swampland.

As in real life, these areas are full of various environmental dangers and wildlife out to get you. It wouldn't be complete without the alligator, the nastiest of them all.

Left alone, most of them will leave you be. Unless you deliberately provoke them, or accidentally venture too close, they tend to mind their own business. However, if you're feeling fiendish, you can take corpses of enemies and let the gators chow down on them for efficient disposal spots. Better yet, take someone you've hogtied and cut their bonds just before an alligator gets them for some vicious man vs. nature action.
