The idea of the game forewarning you of an enemy's expected health/threat level is a double-edged sword. One the one hand you're less likely to get your backside handed to you unawares, forever locked to manual save point before the fight itself - but as a hinderance, it prevents many adventuring Witchers from even attempting the higher level bounties. Make no mistake, many of these higher-level quests will put you down in a couple of hits unless you're extremely conservative when it comes to hitting and retreating, but when you're out in the world, don't be afraid to delve into a war of attrition with some of the Guarded Treasure beasts. High-level bandits for example can nearly always be countered, oils applied to make sure when you hit, it leaves a mark, and getting around the back of any enemy deals instant critical damage - something you can lock many human enemies into repeat stagger animations for an easy win. Overall, if the description of a quest pertains to one beast that needs slaying or providing protection for someone who's village is infested with bandits, it's a very easy way to get some bonus XP, whilst providing the perfect challenge to your abilities.
