There are probably a dozen or more people capable of slotting into an empty space behind your bar but there are only a couple of people that can do your job, you're one of them, and youll have to fight the other inside a steel cage for the right to a weekend away from work. You may feel underappreciated the majority of the time, but theres some small comfort in knowing that, really, youre pretty vital to the running of the place. At least, there is until Christmas rolls around, and you realise how little of your holiday allowance youve been able to take.
