3. Hush
You don't realize how much episodic television is dialog driven until all that chatter is gone. Season four's brilliant Hush took away speech, and left the characters of the show to rely solely on emotion, facial expression, hand gestures, and occasionally, the written word to communicate - both with one another, and with the audience watching. And it worked fantastically, to the point that it is recognized as one of the best episodes of the series. It's also recognized as a spectacular feat of storytelling. It earned Buffy an Emmy nomination for Best Writing, despite an almost total lack of dialog - now that's impressive.
