Theon has had one of the best arcs over the course of the past seven seasons, going from the arrogant but mostly good youngster to the unlikely traitor, the broken down Reek and, eventually, re-emerging as something of the true Theon - he has his courage back, but also humility and honour. He is now fully a Stark and a Greyjoy.

Which means that it's pretty much a perfect time for him to die.

His redemption is all but complete, with just the finishing touches - albeit BIG touches, in trying to save Yara and kill Euron - left to go. After that, a noble, fighting death would arguably be a sweet release and a fitting end for the character who has been through so much, whether it's being fatally wounded by Euron, in saving someone else, or simply fighting for the living.
