Sadly, terrible reviews and poor box office performance meant that Star Trek Nemesis really was "A Generation's Final Journey" for the Star Trek: The Next Generation cast and the Enterprise-E never flew again.
While the ship's missions featured in several Pocket Books novels, one of the most notable post-Nemesis depictions of the Enterprise-E occurred in the lead up to J.J. Abram's 2009 Star Trek reboot. In the Star Trek Countdown comic series written by Star Trek (2009)'s Roberto Orci and Alex Kurtzman, the Enterprise-E was under the command of Captain Data (reconstituted in the body of B-4) and took on Nero and the Narada in a very wonkily illustrated form in the year 2387.
That depiction of events, however, was overridden for the release of Star Trek: Picard which portrayed a very dead Data and no Enterprise-E in sight. While the ship herself has yet to make an appearance in the new 24th century-set series, a model of the Enterprise-E can be seen in Jean-Luc Picard nostalgia vault in the pilot episode "Remembrance".
Further information about the ship has been provided in the Star Trek: Picard prequel novel "The Last Best Hope", which depicts Picard's transfer from the Enterprise to the USS Verity for the Romulan relocation effort. With that effort failing miserably and Picard resigning his Starfleet commission in protest, Worf is promoted to captain of Enterprise-E and is just waiting to show up in a future episode of Star Trek: Picard.
