Ok, straight up, this is a bit of a cheat. Sean Connery was originally approached for the role of Sybok in Star Trek V: The Final Frontier. He turned the movie down as he was busy making Indiana Jones and the Last Crusade at the time, so Laurence Luckinbill stepped in instead.

Whatever our thoughts on the film as a whole, there is no denying that Luckinbill gives a fantastic performance as the emotional half-brother, fully Vulcan brother of Spock.

However, Sean Connery is still in the film. Technically.

For almost the entire movie, Sybok is searching for what the Terrans call Eden, the Romulans call Vorta Vor, the Klingons call Qui'tu, and the Vulcans call Sha Ka Ree.

Sha Ka Ree. As in Sean Connery, but broken up.

That's right, the movie spends most of its plot chasing the actor who turned down the role of the prophet. It was the writers' way of including him in the film while not actually having the man appear. Considering the reception that Star Trek V got on release, it's unclear if Connery ever felt particularly fond of this tribute.
