To be honest, you could fill most of this list with classic NES games. Assuming you didn't get stuck on the final boss (!*$% you Mike Tyson!) a lot of the games of that era were modelled after arcade games that could theoretically be beaten in a single sitting.
Much like Until Dawn, a part of what makes Shovel Knight so special is how it perfectly recreates the experience of a bygone era, while contributing an original piece of entertainment that would have fit said era like a glove. This charming 2D action-platformer could easily stand shoulder to shoulder with classics like Duck Tales, Castlevania and Mega Man. In fact, in many ways it's actually better than the very best of that time ever were.
