2. Maiden Astraea
The Maiden Astraea bossfight is as unimpressive as her name is unpronounceable.
Having said that, it's also one of the biggest gut punches in the entire franchise.
This is partly due to the fact that you're just straight up killing an unarmed woman. She doesn't transform into a huge demon, she doesn't hurl any stupidly powerful spells that somehow clip through solid walls, she just... sits there. Christ, this was meant to be Soulsborne, not GTA.
And then, just to really cement yourself in the annals of sinful douchebaggery, you end up stealing her soul as well.
While Demon's Souls is all about collecting the souls of, well, demons, Maiden Astraea is far from evil, after accepting the soul of a demon only to help the sick and dying. Y'know, standard nun stuff.
Exactly how and why having a demon's soul helps the sick and dying in any way is a little bit of a mystery, but ah well.
And if massacring this poor woman's innocent bodyguard and extracting the soul from her corpse isn't bad enough, we'll all get to go through it again in the remaster. Hurrah!
