8. Who Is The Knight That Frees You? - Dark Souls

At the start of Dark Souls, the player character is freed from the undead asylum by a mysterious, unnamed knight character whose backstory isn't elaborated on in the game itself, making him an immediate and enduring point of fascination for fans.

But dataminers ended up discovering that he actually originally had a name - Oscar of Astora. 

Moreover, there was also an entire cut questline involving Oscar, where he'd periodically show up to help the player, with removed dialogue suggesting the player could even summon him for assistance against tough enemies at certain points.

Dataminers also found evidence that players were originally meant to fight Oscar late in the game, possibly as a major boss encounter just before fighting the game's final boss, Gwyn, Lord of Cinder. But again, it was scrapped.

Quite why FromSoftware reduced Oscar to only a thin sketch of a character is anyone's guess, but the vagueness of his characterisation did at least help make him a low-key franchise icon in his own right.
