7. The Beast Arises
Orks are one of the oldest enemies of mankind in the 40k universe (and da best if you're to speak to Jules about it). The Beast Arises story line presents one of the biggest threats the Imperium of Man has ever seen in the form of "The Beast" a gigantic and powerful Ork Warboss who has organized and led the biggest Ork force humanity has ever seen to its doorsteps.
This novel series spans 12 books, so it would admittedly be difficult to condense into one movie (let alone three!). However some of the books with failed counter attacks could probably be cut and instead give consumers a solid trilogy to work with. The first movie could open with the Imperial fists being overwhelmed by the sheer numbers of Orks being drawn to their conflict on Ardamantua. and finishes with an Ork Attack moon appearing in orbit over the Imperial city, thus setting up the danger for the sequel.
Movie the second begins with the ill fated Proletarian Crusade of humanity attempting to assault the Attack Moon which, well...ends poorly. And yet, the movie closes with a ray of hope when the Ork point of origin is discovered and the hunt for a long lost hero begins to help stem the tide.
The finale could then open with humanity on the edge of the abyss as their last hope leaves for the Ork home world, thereby making the focus of the film on just a select few, and one in particular Vulkan who would go toe to toe with The Beast and it would be, in short, glorious and bloody. Excellent.
