3. Dark Souls
Whilst creator Hidetaka Miyazaki has gone on record saying that he is finished with Dark Souls, there is still the option that other developers may take control of a fourth instalment. And so, while people are adamant that the series is finished, the truth is that it is really up in the air as to whether or not that's the case, with the possibility of a sequel very much on the table.
And with that, the series will never get a satisfying ending. It's less to do with the fact that a developer couldn't do it and more that these games don't cater to satisfying endings in the first place. Ending a Dark Souls game leaves more questions than answers, and usually feels a little cheap. No one got to the end of the original, got set on fire and concluded that was "a great and meaningful ending".
So, if we get that fourth game, it's unlikely to round of the series comfortably, especially considering how Miyazaki - the man who brought a degree of sense to the world - wouldn't be involved.
