8. Disarming Guards/Picking Up Weapons/Bare-Handed Combat

Back to the combat refinements, as back when AC was firing on all cylinders, one of the coolest things you could do was finish an encounter by skewering the last guard in an area with his own spear, sword or axe. You can totally argue that Unity's Arno was supposed to have less of a flair for combat given his upbringing in comparison to Ezio, but when the characters are essentially palette-swaps through their animation anyway, why not carry over the same basic move-sets in combat and build from there? Not only could you previously disarm anyone who was fighting you, but there were unarmed stealth kills and bare-handed finishers if you were feeling brave, not to mention following a big battle you could grab any weapon from the floor to take with you - something that meant you'd be heading into the next skirmish with a whopping great pole or spear on your back. Changes for the sake of character differentiation are all well and good, but go the whole hog and change everything about their movement and control, don't make the player question why some things stay the same and others are omitted entirely.
