7. Great Grey Wolf Sif

For starters, you fight against a giant wolf, what's not to love there? Then, Sif picks up a giant sword to fight you, also awesome; kindling (pun intended) memories of Amaterasu from Okami too. So, you fight against a giant wolf with a giant sword in its mouth. Thankfully, the fight itself is rather fun, if you aren't too over-leveled at the time of fighting him. Sif is rather fast and his actions can be a bit random too, making for a worthy foe. He also has a mix up of normal and AoE attacks, making it important to study his moves. You need to constantly time when you attack and when you run away. You'll need to learn to roll/dodge a lot and run away often because Sif has attacks that can render using a shield to block useless. Granted, this depends on your class too, but it's not very useful to block with a majority of the shields you come across. A drawback to this fight however is the in-game framerate that occasionally drops when fighting Sif. It's an annoying occurence that takes away from the battle, but doesn't completely ruin it. As I said earlier, one of the best aspects about this fight is the atmosphere. Part of that is by learning the lore of the game and how Sif was set to guard the area he was in (among other things). The other part is during the battle itself. Sif will visibly get weaker once he losses a good chunk of health. You'll see him limp around; his attacks much weaker and slower than before. It can be a bit heart-wrenching to see, as the player almost looks like a bully hitting the final blow against Sif. Still, all that is what makes it a truly memorable fight.
