11. Use Mushrooms & Super Stars To Explore The Map

Due to just how much wandering off the beaten path slows you right down, it can actively dissuade you from exploring to find shortcuts.

To remedy that, don't wait and rely on a drift-boost to get you some ways across a patch of grass or dirt, use Super Stars and mushrooms (golden or otherwise) to force your racer through any awkward tundra.

Super Stars especially will shield you from everything including power-ups and environmental hazards, so if you're wanting to literally take a sharp turn and see if there's a way to bypass a whole chunk of the course, fire one up and start exploring.
