10. Krogans

So far they've been reconciled to essentially being hunks of meat with lapses of consciousness, the Krogan's arc throughout the trilogy was always centred around the Salarian Genophage; a horrific population-quelling designer-virus that meant their numbers would never exceed enough to be a threat. Part of Grunt's story in ME2 dove into what it was like being one - albeit a Krogan freed from the virus thanks to being created in a test tube - but as they're a ferocious warrior race just as likely to head-butt you as engage in a discussion about what it means to fight and survive in combat, there's a wealth of untold stories about the inner workings of their clan structure worth telling. Even outside the mythology the idea of playing as one opens up some cool abilities, chances are you'd be able to charge straight into battle fist-first, scattering smaller troops and clearing the way for everyone behind you. One of the most satisfying things you'd see in the older games was Wrex or Grunt steamrolling the last enemy in a given section just as they're backed into a corner, and replicating that first-hand would be a great way to go.
