Huge thank you to Bioware for not avoiding this question, as when I asked about how the remake is tackling Mass Effect 3's divisive ending, they did provide an answer:

The new canon ending is the Extended Cut.

For those unaware, Mass Effect 3's original ending is easily one of the most controversial in gaming history; a conclusion mired in business decisions to make story-essential characters DLC, and the reality of trying to deliver on a half decade-long story with a rabid fanbase.

Bioware would release the "Extended Cut" months after to try and quell the rage, but it didn't solve the issue of having to pay for character Javik, or story content Leviathan, to tie it all together.

Thankfully, for those going through Mass Effect 3 in the Legendary Edition, they'll have access to everything first time through. Even the "Citadel" DLC is included by default, giving the trilogy a send-off it always deserved, in a manner that feels far more organic to purposeful storytelling.
