Some straight-up Road Rash business, you can prod circle/B when on horseback to deliver some quick attacks to either side.

Press to kick and hold to deliver a swift backhand, you can use these non-lethal attacks to bring down fleeing witnesses, or to de-horse a bounty you want to hogtie instead. Or you can just ride up alongside literally anyone and smash them back down to Earth.
