Pearson isn't the most likeable man in Dutch's gang, but that's because he takes his job as the camp cook very seriously. Without him, the other outlaws would be eating berries and slop, and he knows it, giving Arthur a har time if he's not topping up the camp's food supply.

A life of gunslinging never really suited him, as while he clearly loved the spirit of being an outlaw, his talents were better spent elsewhere. It's not much of a surprise then, that after Arthur is killed and the Van der Linde gang disbands, Pearson takes a job at the general store in Rhodes.

During the epilogue, the former cook is happily married and settled down. You can even visit him for unique dialogue, and some artefacts relating to his previous life hang on the walls.
