The thief of the camp, Mary-Beth's skills made her an essential member of the Van der Linde gang, with it being her who'd often scope out the best heist opportunities. Her proficiency as a sleuth and an outlaw was matched by a kind personality, which made her a source of romantic tension for a couple of men in the camp.
However, it's mentioned a few times through the game that her real passion is literature, and she can be found reading around the campfire and even pursuing her own prose. John can find Mary-Beth in the epilogue at Valentine train station, where she reveals she actually maintained this passion outside of the gang, becoming a romance novelist under the pen-name Leslie Dupont, and handing John a copy of her latest book.
Considering Tilly's letter mentions the two still keep in touch, the two women probably enjoyed the most happiness after Van der Linde's collapse.
