1. The 11th Hour
Ultimately there is only one episode that I recommend every new Whovian-to-be to check out if they want to see this show at its absolute best, to see why so many people devote so much of their lives to it, why every big name British actor would sell their soul to be on just one episode: The 11th Hour.
This episode is nothing short of a masterpiece. Everything from the dialogue, to the story, to the pacing, is like a Swiss watch - everything feeling so very fussed over until it was just perfect. There wasn't any extraneous fat on the script, but it doesn't move at too breakneck a pace either.
As you can surmise from the title, this is the opening episode of the 11th Doctor's era. After the legendary Tennant run, new showrunner Steven Moffat knew he had to pull out all the stops to get people on board with a new season with an entirely new crew and the youngest and most obscure actor to ever play The Doctor. And every Whovian worth their salt will tell you they pulled it off with flying colors.
In terms of pacing, foreshadowing, and character establishment, you could teach a class on TV writing with this one episode alone. It is one of the all time best Doctor Who tales ever penned, and by far the best means of getting a newbie into this wacky, insane universe we all love so dearly.
