4. UFC 31 (2001)
UFC 31 probably sits as one of the first real legend encrusted events that the company ever produced.
In the prelims, fans were introduced to the eventual sensation that was B.J. Penn as he made his debut at Lightweight in a winning effort against Joey Gilbert - TKO'ing your opponent in the first round is one way of letting people know what you're all about, I guess.
Then the real fun got underway as Shonie Carter surprised Matt Serra with a stunning spinning back fist KO in Serra's first fight for the company. Another UFC legend in Chuck 'The Iceman' Liddell followed that up by knocking out Kevin Randleman in the first round of their Light Heavyweight encounter.
After this, the UFC's first (and only at this point in time) Welterweight Champion Pat Miletich put his title on the line against Carlos Newton and astoundingly lost his crown after tapping out to a side headlock in the third round.
That's surely enough excitement for one night, right?
Recently crowned Heavyweight Champion Randy Couture and Pedro Rizzo clearly didn't think so, as the pair demolished each other for five rounds. Couture eventually retained his Heavyweight title, but Rizzo definitely gave as good as he got throughout the contest and earned himself a rematch at UFC 34 for his troubles.
It's also worth noting that this was one of the first UFC events under Zuffa management, with Dana White now serving as the new company president.
I think we can all agree that he definitely set the tone for what was to come for the UFC going forward. More awesome cards, stacked with big names.
