2. Mimics
Your party is pretty roughed up by this point. They’ve been through fight after fight in the dungeon, dodged any number of traps and defeated the big villain at the end. There it is though, finally, the treasure chest. Will it contain untold riches? Magic items? Or even the McGuffin they’ve been after? No, it’s a horrible monster that will probably eat one of the party whole.
The Mimic is an apex predator when it comes to ambushing, able to be left to sit in a dungeon alone and wait for its prey to come to it. While motionless it is indistinguishable from the object that it is representing. This means short of your players sticking an arrow through it, there is a low chance it will be discovered until some greedy player goes to investigate. This along with a high health pool for the Challenge Rating, the ability to adhere to anything that it touches and gain advantage on attacks when it has grappled a creature, means that the Mimic can be a handful to take down.
Ideally, you want a very selfish player, possibly a rogue to search the chest when his compatriots are fighting in the next room. Maybe don’t stick it at the end of the dungeon though, we don’t want the players to die after all this.
