1. Capra Demon - Dark Souls
The Capra Demon holds a special place among the bosses of the Soulsborne series by being simultaneously unfair and mechanically boring.
The fight opens with you entering the smallest boss arena imaginable, before The Capra Demon launches himself at you with his dual-wielding machetes. If you manage to avoid that attack then you don't have long before his two pet dogs jump at you, which can easily stun-lock you in the path of the boss' next attack.
You could easily summon for this fight to have some extra fodder for distraction, and not many people would blame you. But if you decide to fly solo, the trick to this encounter is running straight for the stairs before either the dogs or the demon faun can hit you.
After that you just need to get rid of his vicious canines before focusing on him. But even knowing the trick isn't always enough to get you through, as the speed in which both parties attack is immense and often hard to avoid.
After the initial unfairness of having three enemies to deal with is over, the fight becomes a repetitive rinse and repeat of leading the boss up the stairs, then dropping down to quickly run back up and get a falling strike on him.
The problem with this fight is its two extremes that it can't seem to balance correctly. With the dogs present it's an egregiously messy fight that's hard to control, but without them it becomes a walk in the park.
