2. Interaction With Your Favourite Characters

While you may not get to play as one of the main characters (I mean come on - you'd just be repeating the show verbatim), there's every chance that you'll be able to interact with them throughout the series. This would be a major selling point as Game of Thrones has one of the most diverse and interesting rosters of characters on television. I have to reiterate, though, that I hope HBO's involvement includes voice acting... that would be plain awesome. Maybe you could play a member of the Night's Watch when Tyrion visits, or part of Rob Stark's army who runs into him while he's making the rounds. These ancillary characters will all have stories to tell, ones which could easily cross paths with the main narrative. If it's all done successfully, it would be a joy to interact with a range of George R.R. Martin's fully-realised characters. If they wanted to go a different way about it, they could fill in the gaps where characters' stories which are conveyed in the books and show by word of mouth. The writers of the show could use it as an opportunity to create the bits from the book they didn't get a chance to onscreen. Speculation over, I think it's much more likely that if we are to meet these heroes or villains, it will be as a new character.
