Taking the time to pick up an Eevee is often an overlooked exercise in a Pokémon game but, given how powerful some of its evolutions can be, it's definitely something you should be making time for. Even after this point, however, you may want to hold off in simply jamming a stone in its face and having it evolve immediately.

Eevee can learn Bite, one of the game's most useful widespread moves for its ability to make opponents flinch, just before the level 20 mark. Given that 20 or above is when its evolutions start to learn their best moves, hanging onto an Eevee for just long enough to add this great supporting move to your set is definitely worth considering.
