This is something that Red Dead Redemption 2 absolutely nailed - that occasionally forcing you to actually travel the world by various means gives a much grander sense of scale than fast-traveling to all points on the compass.

More-so than any other items on this list, this is a double-edged sword. Some of the escort missions are nothing short of brutal without any fast transport options. Even when there are fast travel options, they can be a pain in the neck in the same way mass transit in big cities is - take a silt strider to Balmora, transfer to the brown line, take that to Vivec, transfer to the 56 bus, take that to end of the line and get on a boat, boat to Tel Branora, another boat to Sadrith Mora, one last transfer to Tel Mora and you're practically there!

However, the value this provides in world-building is well worth any incidental aggravation. It tracks that the reclusive Telvanni would intentionally choose difficult to access locations so they can perform their research in peace. It makes sense that, as a major hub of the island, there are plenty of ways to get to Vivec.
