There's something weird up with the Definitive Edition's vehicles.

While they were never the most sturdy of vehicles in the original trilogy, something seems to have made the vehicles in the Definitive Edition a lot more fragile than they used to be.

A lot of players have noticed that the vehicles have a tendency to explode a hell of a lot quicker and with a lot less damage than they used to. Sometimes all it takes is accidentally crashing into some geometry, and you'll explode and be wasted before you know it.

It also appears that the time it takes for a vehicle to explode once it's on fire has been reduced. In the original games, it gave you a good five seconds or so to bail out of the car and run for safety. In Definitive Edition, this time seems to have been reduced slightly, meaning it's much harder to actually get away from the car that wants to blow you to smithereens.
