Even after all the graphical enhancements over the years, the character animations in both the Fallout and Elder Scrolls series' continues to be both rigid and more than a few steps from the uncanny valley. With the usage of mo-cap, Bethesda would make great progress in combating the opinion that their games look outdated.

Everything from conversations with NPC's to swinging machetes will look more life-like than ever as the movements are perfectly encapsulated to be as fluid as possible. No more stiff 180 degree turns during conversations or animations that would fit in more with an early 360 game.

In order for F5 to LOOK current gen, a move to mo-cap would certainly offer quite the upgrade in the game's aesthetics and animations. The only con would be for Bethesda, as they'd be stuck in the mo-cap studio for most of development just to take care of all the NPC's and the thousands of lines of dialogue.
