4. More RPG Elements
In Grand Theft Auto: San Andreas, players were able to customise CJ in any way they like, making him ridiculously fat or thin, or just incredibly ripped. His clothing and appearance could also be altered, but by the time GTA V rolled around, we were only able to play around with clothes and haircuts.
In this next game, though, it would be great to have a few more options. That means adding more RPG elements, similar to what we saw in Red Dead Redemption 2, but with a few more customisation options. It might also be pretty cool to get the option of designing your character from scratch, something which is going to help with the aforementioned level of immersiveness.
Rockstar going too overboard in this respect wouldn't be the best idea, but just like you could choose to ignore weapon and vehicle (well, horse) customisation in RDR2, that could be incorporated in GTA VI as well. If you want to play around with guns, go for it, but for those of us who just want a ripped leading character with a golden AK-47, those options should definitely be there for gamers.
