18. Plant 42

Like most of the bosses in the first Resident Evil, Plant 42 is a result of Umbrella testing the T-Virus to find out how it will react with different creatures and in this case, an ivy plant.
After Henry Sarton infected Plant 42, it found the Aqua Ring, that was teeming with all sorts of chemicals which accelerated its growth tenfold. Once that occurred, 42 slowly took over the residence, feeding on the unsuspecting employee's blood.
How To Beat:
There are two ways to go about defeating Plant 42 with the first being to just simply shoot the main bulb enough until it falls apart.
The second and more elegant way would be to first deal with the Aqua Ring (exposing Plant 42's roots) and then poison it with V-Jolt. Either way works, but using V-Jolt will save a bunch of crucial ammo for later.
